Scandinavian cuisine depends on fish - the fresher the better - which the Petersens; above; buy from Dominic Celantano; one of St. Lawrence Market's fish vendors. Favored fish are salmon; herring and cod. Mrs. Petersen follows her mother's custom of making everything from fresh products. Among her favorite dishes is stuffed pork loin (recipe below) which she serves with browned potatoes.
